How to Make Homemade Lemon Extract

Food scraps can be used to stock the kitchen pantry with your own specialty ingredients.

Take for instance, citrus peels from lemons, oranges, limes, tangerines, grapefruit etc. Most often than not once we have eaten the fruit or squeezed the juice, we discard the rind/peel.

Lemon (but it applies to all citrus) peels however can be used to make:

Homemade Lemon Pepper
Dry the peel skin-side down on a plate or out in the sun for about 2-3 days and then chop finely. Add to your grinder with whole black pepper and coarse sea salt. Alternatively, you could mix the dried chopped peel with ground black pepper and salt to use as a seasoning.

Lemon Sugar

Add chopped dried peels or lemon extract powder (see below) to a jar with sugar and let it infuse the sugar.

Lemon Extract Powder
Dry the peel skin-side down on a plate or out in the sun for about 3-4 days and then crush with a pestle and mortar or in a spice grinder to a powder.

Lemon Olive Oil

About 1 cup of oil to 2-3 tablespoons of grated or whole lemon peel.  Place in a jar and let stand for about 2 weeks.

Garlic-Lemon Butter

  • 1/2 cup butter, softened
  • 1 teaspoon finely grated lemon
  • 1/4 cup mixed herbs, such as parlsey, chives, chopped
  • 2-3 cloves of garlic

Great on garlic bread or pasta.

Lemon or Orange Essence/Extract

Can use it in place of vanilla essence in cakes, mandazis etc

Vodka is a neutral alcohol, but you could also use brandy.

Lemon extract has a slightly stronger flavour than lemon juice, so a little goes a long way.

  • However many whole organic citrus fruits you have
  • Vodka or brandy
  • Glass jar with a tight lid


Directions


Wash and dry fruit.  Peel outer layer, avoiding the bitter white pith.  Or simply grate the citrus peel.
Put the grated or peeled and chopped peels in the jar and cover completely with vodka.  Seal well and place in a cool dry place.
Shake the bottle gently every so often.
It is good to use after about a week, but it intensifies in flavour the longer you let it infuse.
You can keep adding citrus peels as they become available, making sure to submerge them in vodka.
