One Minute Lemon Mug Cake.

The only thing that stands between you and satisfying that sugar craving is a mug, a few minutes prep time, a microwave and one minute cook time.  Mug cakes are excellent since they are quick and you can make different flavours if you have picky eaters.

That having been said, some people have success on the first try with mug cakes.  Others (like me) however, end up with dry, “egg-y” and rubbery cake, or a gooey mess.

A major reason is over-microwaving.  So, first things first, check the wattage of your microwave.  For instance, this recipe is tweaked from Gemma’s, biggerbolderbaking click here for the video.  Her microwave is 1200 watts and so the  mug cakes take a minute to cook.  Mine is an 800 watt microwave, so it took a little longer.  She recommends adding 15 second intervals if the cake is not done and I found it worked well for me.  There are sites for converting wattage and cook time e.g https://www.microwavewatt.com.

Also, choose a big mug to give the cake enough room to rise.  It should fill half to two thirds the cup or mug.

You will need:

3 Tablespoons all purpose flour.
1/4 teaspoon baking powder
1/8 teaspoon salt
1 large egg
1  1/2 Tablespoons sugar
2 Tablespoons oil
1 teaspoon finely grated lemon rind/zest
1 – 1 & 1/2 Tablespoon fresh lemon juice

Directly in the mug or in a small bowl, mix all the ingredients until there are no lumps.

Microwave for a minute to a minute and a half.

Lemon Mug Cake


Ingredients

  • 3 Tablespoons all purpose flour.
  • 1/4 teaspoon baking powder
  • 1/8 teaspoon salt
  • 1 egg
  • 1  1/2 Tablespoons sugar
  • 2 Tablespoons oil
  • 1 teaspoon finely grated lemon rind/zest
  • 1 – 1 & 1/2 Tablespoon fresh lemon juice

Directions

Directly in the mug or in a small bowl, mix the 3 Tablespoons of flour, 1/4 teaspoon baking powder, 1/8 teaspoon salt and 1 and 1/2 Tablespoons sugar.

Whisk in with a fork, the 1 egg, 2 Tablespoons oil, 1 Tablespoon lemon zest and lemon juice and 1 teaspoon rind.

Microwave for a minute to a minute and a half.
